Quick and Easy Breakfast Burritos

If you’re looking for a delicious, quick and easy breakfast, these burritos won’t disappoint.  They’re hearty and fabulous and you’ll love them… I promise!  The best part is you can add anything you’d like to this mix.  Bacon, ham, steak, hash browns…anything goes.  My Uncle John just happens to make the best, most flavorful ground pork sausage in Texas, so I may never stray from this very recipe.  They’re made to order around here.  Sour cream and extra cheese for me.  Hot sauce and peppers for Bryan.  We pile it on and then spend 30 minutes trying to fold the super stuffed to the brim tortilla.  That’s the tricky part!  Good luck with that!  I hope your day is super happy!

Quick and Easy Breakfast Burritos

Ingredients:

1 pound ground pork sausage, cooked, drained (if necessary)

1/2 cup chunky salsa

8 eggs, scrambled

1-1/4 cups shredded cheddar cheese

Burrito style tortillas

All the extra stuff you love most… more cheese, sour cream, peppers, spices and the list goes on….

Cook and drain ground pork sausage.  Add salsa and let simmer.  In a separate pan, scramble eggs.  Fold scrambled eggs and cheese into sausage mixture.  Build your burrito, adding sausage/egg mixture and all the extra stuff you want, and desperately try folding it without losing all the yummy filling.

After it’s folded, if you’d like to toast it a bit, spray a pan with cooking spray and set on medium heat.  Lay burrito in pan and check after a minute or so.  Flip it when you’re ready to toast the other side and remove it when it’s reached the toastiness your heart desires.  Pile your plate with garnishes and enjoy! 🙂

Incredible Pumpkin Pancakes

I am a morning person.  The beauty and promise a brand new day holds gives me such peace.  I love mornings and I can’t help it.  I’m the only one here who does, though.  There is not a person in this house who is with me on this.  So, I make them breakfast… and it works wonders.  Waking up early for these pumpkin pancakes is worth it.  I promise!

P.S.  You were expecting cake for my first post, weren’t you!?!?  I hope you’ll have a stack of pancakes instead.  We’ll sneak in some frosting on the side.  I hope your morning is happy and beautiful!

Pumpkin Pancakes

Ingredients:

2 cups all purpose flour

3 tablespoons packed brown sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 teaspoon pumpkin pie spice

1/2 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1-3/4 cups milk

3 eggs, lightly beaten

3/4 cup canned pumpkin

1/4 cup vegetable oil

In a large bowl, combine flour, brown sugar, baking powder, salt, pumpkin pie spice, cinnamon, and nutmeg.  In a medium bowl, combine milk, eggs, pumpkin, and oil.  Add egg mixture to flour mixture.  Stir just until moistened (batter will be slightly lumpy).

Heat a lightly greased griddle or large skillet over medium heat.  For each pancake, pour 1/4 cup batter onto griddle.  Cook for 1 to 2 minutes on each side or until golden, turning when tops are bubbly and edges are slightly dry.
